Building on the first edition, this completely revised second edition covers the most relevant parasites associated with foodborne transmission and of global public health relevance. Included are the protozoa with their subgroups: the amoeba, coccidia, flagellates and ciliates. Trypanosoma cruzi has recently been recognized as an emerging foodborne protozoan and has been included in this book. The helminth section is also expanded to cover teniasis, cysticercosis, hydatidosis, and the trematodes and nematodes including Angiostrongylus , present worldwide. Recent advances in detection and control provide the basis for a better understanding of the biology and control of parasitic infections, which in turn will likely contribute to the reduction and elimination of parasitic foodborne outbreaks. With the globalization of the food systems and commercialization, an unintended distribution and occurrence of foodborne parasites have been noted worldwide. Finally, t he burden and risk assessment determinations that have provided a scientific framework for developing policies for the control of foodborne parasites is examined.
