Present Knowledge in Food Safety: A Risk-Based Approach Through The Food Chain presents exposure-led risk assessment and management of changes in chemical, pathogenic microbiological and physical (radioactivity) contamination of ’food’ at all key stages of production from farm to consumption. Within this framework, the book takes a holistic approach to food safety and its regulation, and to the identification of hazard control points. This is a single volume resource which introduces scientific advances to improve the reliability, predictability, and relevance of food safety assessments for the protection of public health.
